Ich zeige hier gleich zwei. Bei der Butternut suche ich Exemplare, die eher lang sind und eine wenig ausgepr\u00e4gte Beule im unteren Teil haben. Wir legen auch noch einige Knoblauchzehen in Schale und ein bis zwei halbierte Zwiebeln in Schale dazu.<\/cite><\/blockquote><\/figure>\n\n\n\n<figure class=\"wp-block-gallery columns-2 is-cropped 543px, 580px\" \/><\/figure><\/li><\/ul><\/figure>\n\n\n\n<p>Die K\u00fcrbisst\u00fccke sind mittlerweile butterweich und lassen sich sehr leicht in St\u00fccke teilen. Die Butternut lassen wir abk\u00fchlen, damit wir sie mit den H\u00e4nden anfassen und sch\u00e4len k\u00f6nnen. Der Hokkaido muss nicht gesch\u00e4lt werden &#8211; ehrlich nicht!<\/p>\n\n\n\n<p>Die Zwiebel pellen und grob zerteilen.<\/p>\n\n\n\n<p>Der Knoblauch ist jetzt sehr weich und l\u00e4sst sich leicht aus der Haut dr\u00fccken, die fast von selbst aufplatzt. Geschmacklich ist er fast s\u00fcsslich. Weich, fast s\u00fcsslich, intensiv. Die Zehen fallen fast von selbst aus der Schale und lassen sich leicht mit der flachen Messerklinge zerquetschen. Wunderbar.<\/figcaption><\/figure>\n\n\n\n<p>K\u00fcrbisst\u00fccke, Zwiebel(n) und einen Teil oder allen Knoblauch in einen grossen Topf geben. Mit Wasser aufgiessen, bis alle St\u00fccke bedeckt oder fast bedeckt sind. Topf auf den Herd stellen und bei mittlerer Hitze halten. Mit einem P\u00fcrierstab eine homogene glatte Masse herstellen.<\/p>\n\n\n\n<p>Mit Salz, Pfeffer und eventuell Muskat abschmecken.<\/p>\n\n\n\n<p>Das Grundrezept ist hier am Ende. Jetzt schauen wir mal, was wir damit machen k\u00f6nnen.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Weitere Zutaten<\/h2>\n\n\n\n<p>Ich habe gelegentlich auch mal folgende Zutaten (in vergleichsweise kleinen Mengen) zus\u00e4tzlich zum K\u00fcrbis verwendet:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Pastinake: lecker, aber nicht jedermanns Sache. Die Pastinake bringt einen s\u00fcsslich-w\u00fcrzigen Geschmack mit.<\/li><li>Sellerie (Knollensellerie): Sellerie schmeckt schnell vor, daher also sparsam einsetzen und vorher abkl\u00e4ren, ob jeder Sellerie mag oder ertragen kann. Sellerie bringt aber eine leicht s\u00e4uerliche Note mit, die wunderbar mit der S\u00fcsse des K\u00fcrbis harmoniert.<\/li><li>Kartoffeln. Kann man machen. Vor Allem, wenn man eh noch Reste hat. Verd\u00fcnnt aber nat\u00fcrlich das K\u00fcrbis-Aroma, bis man im Zweifel bei einer Kartoffelsuppe endet.<\/li><li>Angebratene Auberginen-W\u00fcrfel, die dann nicht mit p\u00fcriert werden. Wunderbar. Passt vor allem zum zweiten nun folgenden Rezept.<\/li><li>Rahm\/Sahne: geht nat\u00fcrlich immer. Muss aber nicht.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Klassische K\u00fcrbissuppe mit Weisswein<\/h2>\n\n\n\n<p>Wir nehmen unser Grundrezept, arbeiten aber mit weniger Wasser und geben pro Person mindestens 1 dl Weisswein dazu. Der Weisswein sollte zwar noch ein paar Minuten mitkochen, damit der Alkohol weitgehend verfliegt. Aber wenn man ihn zu fr\u00fch beigibt, verblasst der frisch-fruchtige Geschmack.<\/p>\n\n\n\n<p>Warum Weisswein? Der s\u00fcssliche Geschmack des K\u00fcrbis kann leicht ins pappige abgleiten, oder zumindest etwas eindimensional-langweilig wirken. Das heisst, um genau zu sein, arbeiten wir parallel.
