Beim gr\u00fcnen Spargel die ledrigen, eventuell trockenen Enden, typischerweise das untere Viertel, entfernen, und noch 5 Minuten mit dem weissen Spargel mitkochen (der Weisse hat dann insgesamt 15 Minuten). R\u00e4ucherlachs, am St\u00fcck gekauft, l\u00e4ngs in Streifen schneiden.<\/p>\n<p>Sauce Hollandaise aufw\u00e4rmen, mit Butter verfeinern, und dann mit Orangenpfeffer und einem Schluck Sambuca abschmecken. Sauce auf den Teller geben.<\/p>\n<p>Abwechselnd die Lachs- und Spargelstangen auf dem Teller anordnen.
